Ingredients
10-15 Pro V Select Whole Natural Cashew
400 grams boneless chicken breasts, cut into 1-inch pieces
1 tbsp blended sesame oil
1 tbsp chopped garlic
½ tbsp chopped ginger
2-3 dried red chillies, stemmed and roughly torn
Salt to taste
Crushed black peppercorns to taste
1 tbsp red chilli paste
½ tbsp dark soy sauce
1½ tbsps red chilli sauce
¼ cup diagonally sliced spring onion greens + to sprinkle
2-3 tbsps cornflour slurry
Method
1. Heat sesame oil in a nonstick wok. Add garlic, ginger, dried red chillies and sauté for 30 seconds.
2. Add chicken and sauté on high heat for 2-3 minutes.
3. Add salt, crushed black peppercorns, red chilli paste, dark soy sauce, red chilli sauce and mix well.
4. Add Pro V Select Whole Natural Cashew, spring onions and mix well.
5. Add cornflour slurry and cook for 2 minutes.
6. Transfer in a serving plate, sprinkle spring onion greens and serve hot.
